Vegan Borbor (Cambodian Rice Porridge)

We all love Borbor (Cambodian Rice Porridge), but have you tried VEGAN Borbor? We created this delicious recipe with only brown rice and no meat (just vegetables). Make your own and add your favorite toppings for a filling breakfast for you and the family!

Minced Tofu Bowl

For Rice Porridge

  • 2 cups of IBIS Brown Rice
  • 4 cloves of garlic (minced)⠀
  • 1 cup of mushrooms – finely chopped
  • 1 cup of broccoli (chopped)⠀
  • 12 cups of vegetable stock
  • 2 shallots (finely sliced)

For Toppings

  • 1 cup of bean sprouts
  • 2 stalks of spring onion (chopped)
  • 1 lime (quartered)
  • 2 tbsp of soy sauce
  • 1 chopped red pepper
  • Ground black pepper (to taste)
  • Black bean in chili oil sauce
    • Rinse 2 cups of IBIS Brown Rice
    • In a large pot, heat 2 tbsp of cooking oil
    • Add chopped garlic and mushrooms and saute on low heat for 2 minutes
    • Add rice and 6 cups of vegetable stock
    • Bring to a boil and immediately reduce to the lowest heat.
    • Cover and simmer for 50 minutes (stir occasionally)
    • While waiting for the Borbor to cook, add 5 tbsp of oil to a small frying pan and turn on the stove at a medium/low heat
    • Add sliced shallots and fry until shallots are golden brown 
    • Transfer shallots onto a plate covered with a paper towel and leave to cool.
    • After 50 minutes of cooking your Borbor, add broccoli and 4 cups of vegetable stock. Cover and continue to simmer. 
    • After 20 minutes, add soy sauce and remaining stock and simmer for another 10 minutes.
    • Turn off the stove and leave covered for 5 minutes. 
    • Serve hot and garnish with fried shallots, beansprouts, fresh spring onion, fresh lime, ground black pepper, soy sauce, and black bean chili oil sauce to taste.
